Ingredients:
1 small to medium whole pumpkin (to fit inside oven)
1 chopped onion
1 chopped green pepper (optional)
2 Tb. oil
1 ? to 2 lbs ground meat (beef, turkey, chicken)
2 Tb. Soy sauce
2 Tb. brown sugar
1 (4 oz.) can sliced mushrooms, drained
1 can cream of cream of chicken or cream of mushroom soup
1 1/2 cups cooked rice
1 (8oz.) can sliced water chestnuts, drained
note:you may add 2 cans of soup if desired (we used 1 of each)

Directions:
Wash pumpkin thoroughly, cut top off and clean out the inside.
Preheat oven to 350 degrees.
In a large skillet, Sauté onion (& peppers) in oil until tender. Brown meat and drain drippings. Add sautéed onions,
soy sauce, brown sugar, mushrooms and soup to meat. Simmer 10 min., stirring occasionally.
Add cooked rice and water chestnuts.
Spoon mixture into pumpkin, replace pumpkin top and set pumpkin on baking sheet. Bake for 1 hour. Serve on a platter and
let everyone scoop out as much as they want.
