Easter Lamb Roast

Dad found in Loblaws flier Easter 1992

1. Mix

1/3 C Lemon Juice

2 tsp Honey

1/2 tsp Salt & Pepper

1 Onion finely chopped

1/2 tsp Garlic chopped in oil

3 TBSP Soya Sauce

1 TBSP Pureed Ginger

2. Add Leg of Lamb, turn to coat. - Cover. Marinate overnight in fridge.

3. Bring to room temperature. Preheat oven to 375F. Place Lamb on rack in open roasting pan and roast till 145F on meat themometer. Approx. 1 hour. Stand 15 min.

4. Mix juices with Memories of Szechwan Peanut Sauce (Loblaws)- Simmer and serve. NOTE: Save Peanut Sauce till the end or it will burn in roasting pan.
